Easy Spinach and Artichoke Dip

Ingredients

2- 10 oz. pkg frozen chopped spinach (thawed, drained)

2- 14oz can artichokes, chopped

1- cup shredded parmesan cheese

1- 8oz. pkg. cream cheese

1- cup sour cream

2- cup shredded mozzarella cheese

1- tsp. garlic powder

1- tsp. onion powder

Salt and pepper to taste

Instructions

Put all ingredients in a 3½ quart slow cooker on HIGH for 30 minutes.

Stir thoroughly and cook for an additional 30 minutes

Serve with baguette slices or assorted crackers.

Baked parmesan potato skins

Ingredients

6 small potatoes, scrubbed and cut in half

1/4 cup butter

½ - cup shredded parmesan cheese

1- tsp. garlic powder

1- tsp onion powder

Salt and pepper to taste

Instructions

Preheat oven to 375 degrees. Melt butter and pour into a 9x13 inch non-stick pan and spread evenly across the bottom. Sprinkle parmesan cheese and seasonings evenly over the butter. Place potato halves face down on the butter and seasonings. Cook the potatoes in a preheated oven for 40 to 45 minutes or until internal temperature is 190 degrees.  Cool for 5 minutes before removing from pan. Serve on a plate with a side of sour cream for dipping.

Bacon jalapeno chicken bites

Ingredients

8 chicken tenders, flattened and cut in two

1 - 8oz. pkg. softened cream cheese

2 - Jalapeno peppers, seeded and finely chopped

8 slices bacon, cut in half

Cajun seasoning to taste

Instructions

Place chicken tenders inside of a large plastic freezer bag and carefully flatten chicken with a meat flattener.

Season chicken with the Cajun seasoning, and then dab ½ teaspoon (more or less) of cream cheese on top of each chicken tender. Top with a scant ¼ teaspoon of peppers over cream cheese. Fold or roll chicken to enclose cream cheese mixture. Wrap each roll with ½ piece of bacon and secure with a toothpick.

Cook in a preheated 375 degree oven for 15-18 minutes or until internal temperature of the chicken is 165 degrees.
