National Eggs Benedict day

To be so simple, this is the kind of breakfast that will ensure you don't have to eat again for the rest of the day. And anything that begins with eggs and ends with bacon is bound to make you smile.

Who knew that halving an English muffin and topping it with ham or Canadian bacon and poached eggs and drowning in creamy hollandaise sauce would be so delightful? There are a veritable bevy of tasty variations, so you can deviate and DIY with any favorites.The origins are a bit unclear, perhaps because of all the various Benedicts trying to claim the dish as their own idea. The most famous, printed in The New Yorker in 1942, states that Lemuel Benedict of Wall Street staggered into the Waldorf Hotel in 1894 and ordered buttered toast with poached eggs, bacon and hollandaise in order to cure his hangover.

Because Eggs Benedict and its variations are a favorite hangover breakfast, this could very well be true. Whether you're hungover or just hungry, enjoy this comforting dish for an early breakfast or a late dinner. It may not cure your headache, but it will sure taste good - especially with a side of hash browns to sop up the last of the hollandaise.
