Emphasis on quality, building relationships at Flying Dog Brewery in Maryland

All beer is local to the brewers at Flying Dog Brewery in Frederick. 

“I think the concept of local matters a lot,” said Jim Caruso, CEO of Flying Dog. 

As the world gets bigger, he said, the more people can connect with the people behind the business.

"It makes the world a friendlier place for people," Caruso said.

Caruso said at Flying Dog, the focus on quality is key, and he wants a quality relationship with every interaction. 

"Both internally and the world outside of the brewery," he said. 

Brewmaster Ben Clark said one thing that makes Flying Dog different is the fact that it uses two kettles to brew beer. 

It takes between six and eight hours to brew a batch of beer, but with two kettles, brewers can overlap batches and brew every three hours.

Clark said beer is brewed 24 hours, five to six days a week. 

With a batch popping out every three hours or so, "you can pump out a lot of beer in a week," Clark said. 

Flying Dog produces about 100,000 barrels of beer per year.
