Here are Nancy's recipes.
Ravens Eggs:
1 dz large eggs
1 bottle ravenswood zinfandel ( yes ravenswood) if ya don’t drink it don’t cook with it.
2 tb maille Dijon mustard
¼ tsp hot sauce
½ tsp lemon juice
¼ cup hellmans mayonnaise
1 slash worchestershire sauce
old bay
Hard boil the eggs by brining the water to a boil, then gently drop each egg in the water so they wont break , using tongs. Allow to boil 7 minutes. Remove from water and cool. Then take the egg whites and remove the yolks , setting the yolks aside. Mix the remaining ingredients and yolks in a bowl and mash up like you are on left tackle. Place in fridge. Next pour the ravens wood in a pot and bring to a boil.. add in whites and cook 5 minutes.
Remove and place in a stainless steel bowl , and cool overnight in the fridge. ( if you are in a hurry shhh add a little purple food color) NEVER COLTS BLUE! Allow to set up overnight or 5 hrs until the egg white turns deep purple. Remove from wine and stuff the yolk mix in the egg.
Don’t forget to garnish with Old Bay.
And last but not least : ALL EGGS MUST BE CONSUMED BEFORE THE BEGINNING OF THE GAME .. OTHERWISE ITS BAD LUCK!
Tailgate green chile:
½ lb ground pork
½ lb ground beef
1 lb ground chicken
2 cups fine diced red onion
1 cup chopped fine cilantro
2 cups chopped green onions
4 cups green salsa
3 cups red salsa
3 corn tortillas raw chopped fine.
juice from 2 limes
juice from 1 lemon
¾ cup orange juice
6 cloves garlic chopped fine
2 tb butter
Take the butter and melt , then add in onions, garlic, and tortillas , then add in ground meats and cook until done draining off all excess fat. Then add in juices, sand salsas, mix until absorbed but not dry about 15 minutes . then add in cilantro next mix spices below and add in cooking another 15 minutes.
1 tb smoked chipotle chile powder
1 tb regular chili powder
1 tb cumin
1 tb onion powder
1 tsp garlic powder
1 tb smoked salt * add more if you like
1tb smoked black pepper
Serve with Mexican mixed cheddar/ jack cheese, and tortilla chips. This is any easy awesome chile that can be made the day before the big game.
