This morning on Good Morning Maryland @ 9, Megan talked with Wegman's nutritionalist Krystal Register about one of those key items to get into your body: antioxidants. They also discussed how simple it is to do and some of the tasty ways you can enjoy healthier foods and drinks this holiday season.
Clementine Pomegranate Salad
Serves 8
8 Clementine oranges, divided
½ cup pomegranate seeds (1 medium pomegranate)
¼ cup extra-virgin Tuscan-style olive oil
Salt and pepper to taste
10 ounces Spring Mix salad greens
Fleur de Sel
Peel and section 4 Clementines, removing as much of the white membrane beneath the skin as possible. Set aside.
Cut pomegranate in half. Submerge in a large bowl of water (to prevent splattering). Remove seeds from pomegranate. Rinse seeds, removing membranes. Set seeds aside.
Make vinaigrette by juicing the remaining 4 Clementines in a bowl. Add olive oil and whisk to blend well. Season with salt and pepper to taste.
Toss spring greens with vinaigrette. Arrange on a serving platter. Top with Clementine segments and pomegranate seeds. Sprinkle with Fleur de Sel.
